Celeriac

Plant between 6 (for smaller bulbs) and 12 (for larger bulbs) inches apart.  They also like rich soil and lots of water.  Long season so plan not to harvest until October or November.

Celeriac’s flesh has almost no fibers and is packed with pure celery flavor. Harvest late summer through fall at a 3-5″ diameter. The roots store as easily as carrots and add celery flavor to vegetable juice, soups and stews, or can be shredded (like carrots) for salads through fall and winter.
