As the days grow shorter and the sun less intense, we look forward to heartier garden staples like “winter” varieties of squash. Don’t let the name fool you: these beauties are being harvested by Farmer Jonathan for your late-summer tables. After Labor Day, we will have Delicata, Spaghetti, and Acorn squash – all grown from seed using organic practices.
Spaghetti squash makes a great high-fiber, nutritious substitute for pasta, and a great vehicle for late-tomato-season sauces (we still have some tomatoes left). Try this recipe now that it is cool enough to turn the ovens back on.
Come get your squash and other freshly-picked produce at our weekly Farm Stand at Ambler Farm, every Saturday from 9am-1pm, and on Wednesdays from 11am – 3pm at the weekly Wilton Farmers’ Market on the Town Green.
